I am sorry to hear about what happened! You may be able to recover the contents of Notebooks, but it depends on which iTunes backups you still have. Here is what you can do:
- Download one of the iPhone Backup Extractors from
http://supercrazyawesome.com/ or
http://www.iphonebackupextractor.com/
http://www.icopybot.com/itunes-backup-manager.htm
- Launch Backup Extractor, scan for iTunes backups and choose the latest one.
- From the list of application that appears, choose Notebooks and extract its contents to a folder.
This folder contains the contents of Notebooks at the time of that backup. If you don't see any documents, then iTunes seems to have overwritten your last full backup. You can then try to extract another backup (in case the backup extractor lists more than one). If that still does not recover your documents, and if you made regular backups of your computer, you might try to look at any of the older iTunes backups.
If all that does not restore your documents then I am afraid we are out of luck :-(
