I am not looking for privacy, but don't want to accidentally go into edit mode, move, delete or add, change the notes, but allow all to still read it only.

Dear Alex,
to keep a note from being edited, open its "Info" and turn on the switch "Read Only". You reach the info either by tapping the blue circle with the white arrow in the list view, or by tapping the "i" button in a note's toolbar.
There is no option to keep a note from being deleted or moved, though.

Yes, thanks for that info, I located the feature. However I have about 1 thousand notes and which to lock them all. Is there an option to do it quickly. By default, I would like to import them in read only. Is that possible.

Hi Alex, sorry for the late follow-up.
Currently, it is not possible to import notes as read-only by default. To make accidental modification of your notes a bit harder, you might activate "Clickable Links" in Notebooks' settings. WIth this, a single tap on a note does not show the keyboard. I know, this is not a general solution, but might be a workaround.
