The app by default gives a name to a new note using the first words of the text. On the edit page, substituting a new name for the default name is ineffective: on return to the Home page, the default name remains.
This is not an answer but extra info. On my iPod touch, 3rd gen, I am using iOS4. Perhaps v. 3.2.1 will restore the name change.

Just to make sure: when you change the title on the edit page you need to tap "Save" on order to make the change effective. Did you do that? (Returning to the previous view without that does not "commit" the change)
