Can I "passcode-protect" notes and documents in batches, or when I am syncing, or do I have to go to each separate note/book and turn on the lock? I want to bring 30 notes in and have them already be password-protected.

protecting a book automatically protects its contents (other books and documents) as well. So when you import those 30 note into one book it would be enough to protect this book only.
If the notes go to different places, however, you might have to protect each one of them separately.
